
Pi Lo Chun Liquor
This liquor green tea liquor is made with the subtly fresh Pi Lo chun variety and sweetened with crisp orange blossom honey. This is a lovely spring time liquor that is sure to leave everyone refreshed, if not spinning.

Settling time: 1 week
Serving Size: 10-12
Ingredients
1/2 cup loose Pi Lo Chun tea
1 liter vodka
1 cup orange blossom honey
2 tablespoons brown sugar
1/2 orange
1 cup water
Directions
1. Pour vodka into a 1 gallon mason jar and add tea. Close the lid and shake for about a minute.
2. Set the jar in a dark place for no longer that 24 hours. (8 hours is usually good)
3. Strain tea from vodka. Make sure no leaves remain in the liquor.
4. Squeeze 1/2 orange into the tea steeped vodka.
5. In a small pot, bring 1 cup water to a low boil. Add honey and brown sugar. Stir until dissolved.
6. Allow watered down honey to cool.
7. Add honey water to steeped vodka. Close the lid of the mason jar and shake to mix.
8. Funnel the liquor into sealable bottles. (I use grolsch style bottles.)
9. Seal the bottle with wax.
10. Let liquor sit for at least a week in the bottle. (The liquor will taste better if you let it sit for a month.)
11. Break wax seal, drink and enjoy!
