It is a very simple recipe and should cook in about a half hour. You can buy pre-diced mango and sliced portabella which will cut the preparation time down to nearly nothing. I decided to go with a simpler recipe because that is what people tend to prefer cooking. There is no reason to make things overly complicated if they don’t need to be. To modify this into a more complete meal, you can serve it with a side of rice or possibly some pan fried lo mien noodles. If you want a lighter meal, you can serve it atop a bed of lettuce or fresh spinach as a salad. You won’t need dressing because of the nice sauce the mango and oolong will make.
